The best choice for most residential projects. Has specific experience with firebrick installation, refractory mortar, flue sizing, and render systems. Manages the complete project including coordination of plumber, gas plumber, and electrician. Some focus on specific oven brands (e.g., Fire Brick Company Flamesmiths); others are brand-independent. Request portfolio of previous pizza oven builds specifically โ not just general outdoor work.
Stonemason or bricklayer with pizza oven experience
Many skilled stonemasons and bricklayers have built pizza ovens as part of their work. The key question: how many pizza ovens specifically? A general stonemason who has built one or two ovens is not equivalent to a specialist who builds 20โ30 per year. Ask for photos and references from pizza oven builds, not just masonry projects generally.
DIY + tradesperson hybrid
You self-assemble the precast dome (most kits are designed for this); a licensed gas plumber connects the gas (for gas ovens); and a bricklayer or stonemason builds and renders the base and chimney. This approach can save $2,000โ$4,000 on labour. The flue installation should still be handled by someone with specific experience โ do not DIY the flue on a wood-fired oven.

Be cautious of installers who: quote without a site visit; cannot provide local pizza oven references specifically; cannot name the refractory mortar they use; don't mention curing in their process; include gas connection without a specific licensed gas plumber named; or give unusually low lump-sum quotes without itemisation. Cheap quotes that blow out on-site are common in this market.
